This and that

Wednesday I was home with both kids because D was sick and I was home so Emma was too! Emma took a shower that morning. First of all, for being 2 1/2 she sings VERY loudly in the shower. It is quite entertaining! Here is how the conversation went:

E: Mommy I all done.

Me: Okay Em, come on out.

Me: Oh Em, the bath mat is all wet. It's really wet. Let's put it in the dryer for mommy.

Em: I do it, I do it!

Em (running down the hall with the hooded towel draped from her head, otherwise naked, and holding the wet bathmat): "I Superman to the resuce! I Superman! Superman to the rescue!"

I LOVE her little personality! She had me laughing out loud!

I'm not one for coming up with my "own" recipes. I love to cook, but usually follow a recipe. With it being Friday last night, and being good rule abiding Catholics, I was trying to come up with a non-meat dish that everyone else wouldn't put their noses up at. We had already had the oh-so-nutritious deep fried fish on Wednesday (Ash Wednesday--double whammy with no meat twice in one week!), so I was trying to avoid "fishy" dishes again! Here's what I came up with:

I mixed grated cheddar and monteray jack cheese, chopped up onion, and chopped mild green chiles. Spread the mixture inside tortillas. Roll up, place seam side down in a baking dish, pour one can of store bought enchilada sauce on top, sprinkle with more grated cheese. Bake at 350 degrees for 20-25 minutes. My kids liked them as did the hubby! Very yummy!

It is a beautiful gorgeous day. It is amazing how a little fresh air and some time outside can make a sore throat, stuffy nose, and crabby kids all feel a little better! I was hesitant to let the kiddos out, because Em has D's fever now. She really wanted out though, and so did I!!! The fresh air was great for all of us! Much better than sitting on the couch watching movie after movie! (Been there done that already with sick kid #1 this week).

And that my friends, is what life is like for a Real Housewife in the O.C.!!! I clean my own house, cook my own meals, and still have sweats on at 12:45 PM on a Saturday. Oh yeah---and my kids are eating mac and cheese and dino nuggets! Not too glamorous--but we love it!
